Hamon (Hamon) What meat dishes should you try in Spain? First of all-the famous dry-cured ham ham. It is prepared from the hind legs of pigs, sprinkled with plenty of salt. After salting there is a drying process which in different areas and climatic conditions lasts from 6 to 36 months. The last stage of drying takes place in cellars with a special microclimate, hams ripen in limbo, acquiring a unique aroma and taste. The meat is cut very thin. Doing this professionally trained person – cortador – with a special knife and a stand for cutting (jamonera). If in a restaurant you see someone eating ham on a piece of bread, it means that this person is a foreigner. The Spaniards will never do so, so as not to lose the purity of taste. Jamon is traditionally served with olives and a glass of sherry. In Spain there is a special institution – jamoneria where you can eat different types of jamon.
